Spanning across two shop house units at 38-40 Tras Street, BAM! encloses a warmly-lit dining room, a floor-to-ceiling sake cellar with more than 80 outstanding Sake labels, a discreet private dining space and a relaxed open kitchen where dining becomes a spectator sport.

A Spanish chef through and through, Chef Pepe Moncayo is not one to be pigeonholed by geography when it comes to food. Steeped in a rich Catolonian heritage, his cuisine is injected with a worldly culinary sensibility, driven by the finest ingredients of the season.
Having cut his teeth at several Michelin-starred restaurants around the world-including a stint at the now-defunct Santi-Chef Pepe now helms the kitchen at BAM! as Executive Chef, where each creation is an exquisite expression of his life’s experiences, elevated by innovative permutations of flavours and textures.
First introduced to the "Modern Shudo" way when visiting a brewery in Japan during his travels, Chef Pepe was immediately drawn to how sake brings out the "umami" flavours of food, adding a divine dimension to cuisine from around the world. This discovery eventually set the stage for his culinary output at BAM!, where each of his desirable creations is paired with exceptionally libations from the cellar.

After winning the Outstanding Culinary Apprentice in the World Gourmet Summit Awards of Excellence 2009, Chef Li Si sharpened her cooking and creativity skills when she worked alongside established chefs in Dubai, Spain and Singapore.
As Bam!'s Chef de Cuisine, Chef Li Si runs the kitchen with Chef Pepe and her lead of the team has impressed diners - many who have often mistaken her as a student due to her petite stature.
"Cooking from the heart", "thinking out of the box" and "paying close attention to details" are mantras from her mentors that Chef Li Si holds close to when creating new dishes with inspirations derived from her travels, love for food and the art of cooking.
Omakase is the Japanese tradition of entrusting the entire dining experience to the chef.
